Lemon Lavender Cheesecake Crumble Bars

A twist on the classic cheesecake crumble, these bars combine a lemon lavender cheesecake with a crunchy oat and brown sugar topping.

Lemon Lavender Cheesecake Crumble Bars

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 2 cups mixed berries (such as blueberries and raspberries)
  • 2 tablespoons lemon juice
  • 1 teaspoon dried lavender buds
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat and Prepare the Crust

Preheat the oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.

In a medium bowl, whisk together the flour, granulated sugar, and brown sugar. Stir in the melted butter until the mixture forms a crumbly crust. Press the mixture evenly into the prepared baking dish.

Step 2: Prepare the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and beat until combined. Beat in the eggs one at a time, followed by the vanilla extract.

Stir in the mixed berries, lemon juice, and dried lavender buds.

Step 3: Assemble and Bake the Bars

Pour the cheesecake filling over the crust. Smooth the top with a spatula.

Bake for 35-40 minutes or until the edges are set and the center is slightly jiggly.

Step 4: Prepare the Crumble Topping

In a small bowl, mix together the remaining 1/2 cup of granulated sugar and the flour. Cut in the cold butter until the mixture resembles coarse crumbs.

Sprinkle the crumb topping evenly over the cheesecake filling.

Bake for an additional 20-25 minutes or until the top is golden brown and the filling is set.

Step 5: Cool and Serve

Let the bars cool completely in the pan before refrigerating them for at least 4 hours. Cut into squares and serve chilled.


Note: These bars will have a lovely lemon flavor with a subtle hint of lavender. The crumble topping adds a delightful textural element to this dessert!
