Description

These bright and citrusy muffins are infused with the warmth of fresh ginger and a hint of lemon zest. Perfect for a morning pick-me-up or as a sweet treat any time of day.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

Step 1: Preheat and Prep

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together flour, sugar, baking powder, and salt. Set aside.

Step 3: Combine the Wet Ingredients

In a large bowl, combine melted butter, eggs, lemon juice, grated ginger, vanilla extract, and lemon zest. Whisk until well combined.

Step 4: Add Dry to Wet

Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Be careful not to overmix.

Step 5: Divide and Bake

Divide the batter evenly among the muffin cups. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
