Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 medium zucchini, spiralized
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 30 seconds, until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.
- In a small bowl, whisk together the lemon juice, lemon zest, cilantro, sour cream or yogurt, lime juice, salt, and pepper. Set aside.
- Add the zucchini noodles to the skillet and cook for 2-3 minutes, until slightly softened but still bright green.
- Divide the zucchini noodles among plates and top with the shrimp. Drizzle with the cilantro lime crema and serve immediately.
