Lemon-Garlic Shrimp Tacos with Mango Salsa
Ingredients:
- 1 pound raw shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced (adjust to taste)
- 1 lime, juiced
- Pinch of salt
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
- Stir in shrimp, lemon juice, salt, and pepper. Cook for 2-3 minutes per side, until shrimp are pink and opaque.
- Warm tortillas according to package instructions.
- While the shrimp cooks, combine all salsa ingredients in a bowl. Mix well and set aside.
- Fill warmed tortillas with cooked shrimp and top generously with mango salsa. Serve immediately.
