Lemon Blueberry Sunshine Cake

A refreshing lemon and blueberry sponge cake perfect for springtime.

The Lemon Blueberry Sunshine Cake Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest
  • 1 cup blueberries

Instructions

Step 1: Preheat and Prepare the Pan

Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round cake pan and set it aside.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set this mixture aside for now.

Step 3: Prepare the Wet Ingredients

In a large mixing bowl, use an electric mixer to cream together the butter until light and fluffy. Beat in the eggs one at a time, followed by the lemon juice and zest.

Step 4: Combine the Mixtures

Gradually add the dry ingredients mixture to the wet ingredients, beating until just combined. Do not overmix.

Step 5: Fold in the Blueberries

Gently fold in the blueberries.

Step 6: Pour into the Prepared Pan

Pour the batter into the prepared cake pan and smooth out the top.

Step 7: Bake

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely on a wire rack.
