Lemon Blueberry Crumble Bars
Description
A refreshing dessert that combines the brightness of lemons with the sweetness of blueberries. These crumble bars are perfect for springtime gatherings or potlucks.
Ingredients
Filling
- 1 cup fresh blueberries
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1 tablespoon all-purpose flour
Crumble Topping
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 teaspoon vanilla extract
- 1/4 cup chopped fresh blueberries
Instructions
- Preheat: Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving some overhang for easy removal.
- Prepare Filling:
- In a medium bowl, whisk together the blueberries, lemon juice, sugar, and salt. Let it sit for about 10 minutes, allowing the berries to release their juice.
- Stir in the beaten egg and flour until well combined.
- Assemble: Pour the filling mixture into the prepared baking dish.
- Make Crumble Topping:
- In a large bowl, whisk together the oats, brown sugar, and salt.
- Add the cold butter to the dry ingredients and use your fingers or a pastry blender to work it into the mixture until it resembles coarse crumbs.
- Stir in the vanilla extract and chopped blueberries.
- Top with Crumble: Evenly spread the crumble topping over the filling, making sure to cover the entire surface.
- Bake: Bake for 35-40 minutes or until the top is golden brown and the filling is set.
- Cool: Let it cool completely in the pan before refrigerating it for at least 2 hours or overnight.
Serve
Cut into bars of your desired size and serve chilled. Enjoy!
