Ingredients
For the Brownies
- 1 cup (200g) dark chocolate chips (at least 70% cocoa)
- 1/2 cup (100g) unsalted butter, at room temperature
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 1 and 1/4 cups (160g) all-purpose flour
- 1 teaspoon salt
For the Lavender Honey Creme Brûlée Mousse
- 1 cup (200g) heavy cream
- 1/2 cup (100g) granulated sugar
- 2 tablespoons dried lavender buds
- 2 tablespoons honey
- 2 large egg yolks
- 1 teaspoon vanilla extract
Instructions
Make the Brownies
- Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan and line it with parchment paper.
- Melt the chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth. Let cool slightly.
- In a medium bowl, whisk together the flour, salt, and sugar.
- Add the egg and vanilla extract to the melted chocolate and stir until well combined.
- Gradually add the flour mixture to the chocolate mixture, stirring until just combined.
- Pour the batter into the prepared baking pan and smooth the top.
Bake the Brownies
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Remove from the oven and let cool completely in the pan.
Make the Lavender Honey Creme Brûlée Mousse
- In a small saucepan, combine the heavy cream, granulated sugar, and lavender buds. Heat over medium heat, stirring occasionally until the mixture comes to a simmer.
- Remove from the heat and let steep for 10-15 minutes. Strain the mixture through a fine-mesh sieve into a clean bowl, discarding the lavender buds.
- Whisk in the honey and egg yolks until well combined.
Whip the Cream
- In a separate bowl, whip the heavy cream until stiff peaks form.
Assemble the Brownies
- Once the brownies are completely cool, cut them into small squares.
- Spoon a dollop of whipped cream onto each square of brownie.
- Drizzle the lavender honey creme brûlée mousse over the whipped cream.
- Sprinkle a pinch of granulated sugar over the top of each brownie.
Caramelize the Sugar
- Using a kitchen torch, carefully caramelize the sugar on top of each brownie until golden brown.
