Lavender Honey Creme Brûlée Mousse Brownies

A rich, fudgy brownie base topped with a light and airy lavender honey creme brûlée mousse, finished with a caramelized sugar crust.

Ingredients

For the Brownies

  • 1 cup (200g) dark chocolate chips (at least 70% cocoa)
  • 1/2 cup (100g) unsalted butter, at room temperature
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 and 1/4 cups (160g) all-purpose flour
  • 1 teaspoon salt

For the Lavender Honey Creme Brûlée Mousse

  • 1 cup (200g) heavy cream
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons dried lavender buds
  • 2 tablespoons honey
  • 2 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

Make the Brownies

  1. Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan and line it with parchment paper.
  2. Melt the chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth. Let cool slightly.
  3. In a medium bowl, whisk together the flour, salt, and sugar.
  4. Add the egg and vanilla extract to the melted chocolate and stir until well combined.
  5. Gradually add the flour mixture to the chocolate mixture, stirring until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.

Bake the Brownies

  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Remove from the oven and let cool completely in the pan.

Make the Lavender Honey Creme Brûlée Mousse

  1. In a small saucepan, combine the heavy cream, granulated sugar, and lavender buds. Heat over medium heat, stirring occasionally until the mixture comes to a simmer.
  2. Remove from the heat and let steep for 10-15 minutes. Strain the mixture through a fine-mesh sieve into a clean bowl, discarding the lavender buds.
  3. Whisk in the honey and egg yolks until well combined.

Whip the Cream

  1. In a separate bowl, whip the heavy cream until stiff peaks form.

Assemble the Brownies

  1. Once the brownies are completely cool, cut them into small squares.
  2. Spoon a dollop of whipped cream onto each square of brownie.
  3. Drizzle the lavender honey creme brûlée mousse over the whipped cream.
  4. Sprinkle a pinch of granulated sugar over the top of each brownie.

Caramelize the Sugar

  1. Using a kitchen torch, carefully caramelize the sugar on top of each brownie until golden brown.
