Korean-Style Breakfast Burrito Fiesta

Ingredients:
For the Chorizo Filling:
- 1 lb Korean chorizo sausage
- 2 cloves of garlic, minced

- 1 cup kimchi, finely chopped
- 2 tablespoons lime juice
- 1 tablespoon honey

For the Cilantro-Lime Sauce:
- 1 cup plain Greek yogurt
- 1/2 cup lime juice
- 1 teaspoon honey
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
Instructions:
- Prepare the Chorizo Filling:
- In a large skillet, cook the chorizo over medium-high heat for about 5 minutes, breaking it up with a spoon as it cooks.
- Add the minced garlic and cook for another minute.
- Stir in Gochujang, soy sauce, and chopped cilantro. Season with salt and black pepper to taste.
- Prepare the Kimchi Slaw:
- In a medium bowl, combine chopped kimchi, lime juice, honey, Gochujang, salt, and black pepper. Mix well to coat.
- Prepare the Cilantro-Lime Sauce:
- In a small bowl, whisk together Greek yogurt, lime juice, honey, chopped cilantro, salt, and black pepper until smooth.
- Assemble the Breakfast Burritos:
- Warm large flour tortillas according to package instructions.
- Spoon about 1/2 cup of chorizo filling down the center of each tortilla.
- Add a spoonful of kimchi slaw on top of the chorizo.
- Dollop with cilantro-lime sauce and top with shredded cheese, chopped cilantro, or diced green onions (optional).
- Fold and Serve:
- Fold the bottom half of each tortilla up over the filling to form a burrito shape.
