Korean-Style Breakfast Burrito Fiesta

A breakfast burrito like no other, filled with spicy Korean chorizo, crispy kimchi slaw, and creamy cilantro-lime sauce.

Korean-Style Breakfast Burrito Fiesta

Servings: 6-8 people

Ingredients:

For the Chorizo Filling:

  • 1 lb Korean chorizo sausage
  • 2 cloves of garlic, minced
  • 1 tablespoon Gochujang (Korean chili paste)
  • 1 teaspoon soy sauce
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

For the Kimchi Slaw:

  • 1 cup kimchi, finely chopped
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon Gochujang (Korean chili paste)
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish

For the Cilantro-Lime Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cup lime juice
  • 1 teaspoon honey
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Chorizo Filling:
    • In a large skillet, cook the chorizo over medium-high heat for about 5 minutes, breaking it up with a spoon as it cooks.
    • Add the minced garlic and cook for another minute.
    • Stir in Gochujang, soy sauce, and chopped cilantro. Season with salt and black pepper to taste.
  2. Prepare the Kimchi Slaw:
    • In a medium bowl, combine chopped kimchi, lime juice, honey, Gochujang, salt, and black pepper. Mix well to coat.
  3. Prepare the Cilantro-Lime Sauce:
    • In a small bowl, whisk together Greek yogurt, lime juice, honey, chopped cilantro, salt, and black pepper until smooth.
  4. Assemble the Breakfast Burritos:
    • Warm large flour tortillas according to package instructions.
    • Spoon about 1/2 cup of chorizo filling down the center of each tortilla.
    • Add a spoonful of kimchi slaw on top of the chorizo.
    • Dollop with cilantro-lime sauce and top with shredded cheese, chopped cilantro, or diced green onions (optional).
  5. Fold and Serve:
    • Fold the bottom half of each tortilla up over the filling to form a burrito shape.
    • Serve immediately and enjoy!
