Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons grated fresh ginger
- 1 tablespoon brown sugar
- 1 teaspoon Jamaican jerk seasoning
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 8-10 corn tortillas
- Mango salsa (see below)
- Chopped fresh cilantro, lime wedges, and sour cream for garnish
Instructions
- In a medium bowl, whisk together jerk seasoning, brown sugar, ginger, and cayenne pepper.
- Add the shrimp to the bowl and toss to coat evenly with the spice mixture.
- Heat 2 tablespoons of oil in a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side or until pink and cooked through.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by placing 3-4 shrimp on each tortilla, then top with mango salsa.
Mango Salsa
- 2 ripe mangos, diced
- 1/2 red onion, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1 lime, juiced
- Salt to taste
Mix all the ingredients together in a bowl. Taste and adjust seasoning as needed.
Serving Suggestions:
- Garnish with chopped cilantro, lime wedges, and a dollop of sour cream.
- Serve immediately and enjoy the spicy kick!
