Jamaican Jerk Shrimp Tacos with Mango Salsa

A fusion twist on traditional tacos, this spicy dinner combines the bold flavors of Jamaican jerk seasoning with succulent shrimp and a sweet mango salsa.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon brown sugar
  • 1 teaspoon Jamaican jerk seasoning
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 8-10 corn tortillas
  • Mango salsa (see below)
  • Chopped fresh cilantro, lime wedges, and sour cream for garnish

Instructions

  1. In a medium bowl, whisk together jerk seasoning, brown sugar, ginger, and cayenne pepper.
  2. Add the shrimp to the bowl and toss to coat evenly with the spice mixture.
  3. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side or until pink and cooked through.
  4. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  5. Assemble the tacos by placing 3-4 shrimp on each tortilla, then top with mango salsa.

Mango Salsa

  • 2 ripe mangos, diced
  • 1/2 red onion, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 lime, juiced
  • Salt to taste

Mix all the ingredients together in a bowl. Taste and adjust seasoning as needed.

Serving Suggestions:

  • Garnish with chopped cilantro, lime wedges, and a dollop of sour cream.
  • Serve immediately and enjoy the spicy kick!
