Honey-Glazed Salmon with Roasted Brussel Sprouts and Pistachios

A simple yet elegant dinner featuring sweet and savory flavors.

Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup honey
  • 1 tbsp lemon juice
  • 1 lb brussel sprouts, trimmed and halved
  • 1/4 cup pistachios, roughly chopped
  • 1 tbsp butter

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, salt, pepper, honey, and lemon juice.
  3. Place salmon fillets in a baking dish and pour the honey glaze over them.
  4. Toss brussel sprouts with remaining olive oil, salt, and pepper on a separate baking sheet.
  5. Bake salmon and brussel sprouts for 12-15 minutes, or until salmon is cooked through and brussel sprouts are tender.
  6. Melt butter in a small saucepan over medium heat. Add pistachios and toast for 2-3 minutes, stirring frequently.
  7. Serve salmon topped with roasted brussel sprouts and toasted pistachios.
