Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup honey
- 1 tbsp lemon juice
- 1 lb brussel sprouts, trimmed and halved
- 1/4 cup pistachios, roughly chopped
- 1 tbsp butter
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, salt, pepper, honey, and lemon juice.
- Place salmon fillets in a baking dish and pour the honey glaze over them.
- Toss brussel sprouts with remaining olive oil, salt, and pepper on a separate baking sheet.
- Bake salmon and brussel sprouts for 12-15 minutes, or until salmon is cooked through and brussel sprouts are tender.
- Melt butter in a small saucepan over medium heat. Add pistachios and toast for 2-3 minutes, stirring frequently.
- Serve salmon topped with roasted brussel sprouts and toasted pistachios.
