Honey-Glazed Salmon with Roasted Brussel Sprouts and Citrus Quinoa

A vibrant and healthy meal featuring succulent salmon glazed with a sweet and tangy honey mixture, roasted brussel sprouts for a satisfying crunch, and zesty citrus quinoa for a burst of flavor.

Ingredients:

  • 1 pound salmon fillets, skin on
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound brussel sprouts, trimmed and halved
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 orange, zested and juiced
  • 1 lime, zested and juiced

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, honey, lemon juice, ginger, salt, and pepper. Pour the mixture over the salmon fillets and coat evenly.
  3. Arrange the brussel sprouts on the prepared baking sheet and drizzle with olive oil, salt, and pepper. Toss to combine.
  4. Place the salmon fillets on top of the brussel sprouts.
  5. Roast for 15-20 minutes, or until the salmon is cooked through and the brussel sprouts are tender.
  6. While the salmon and brussel sprouts roast, cook the quinoa according to package instructions, using vegetable broth instead of water. Stir in the orange zest, orange juice, lime zest, and lime juice once the quinoa is cooked.
  7. Serve the honey-glazed salmon with roasted brussel sprouts and citrus quinoa.
