Ingredients:
- 2 Salmon filets (6 oz each)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 1/2 teaspoon black pepper
- 1 pound carrots, peeled and sliced
- 1 tablespoon sesame seeds
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together the olive oil, honey, soy sauce, ginger, and black pepper.
- Place salmon filets in a baking dish and pour the honey-ginger glaze over them, ensuring they are evenly coated.
- Arrange the sliced carrots around the salmon in the baking dish.
- Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes, until fragrant and lightly browned. Set aside.
- Bake for 12-15 minutes, or until the salmon is cooked through and the carrots are tender.
- Garnish with toasted sesame seeds and serve immediately.
