Honey-Ginger Glazed Salmon with Roasted Carrots and Toasted Sesame Seeds

A quick and flavorful weeknight meal featuring honey-ginger glazed salmon, roasted carrots, and a sprinkle of toasted sesame seeds for added crunch.

Ingredients:

  • 2 Salmon filets (6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 1/2 teaspoon black pepper
  • 1 pound carrots, peeled and sliced
  • 1 tablespoon sesame seeds

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, honey, soy sauce, ginger, and black pepper.
  3. Place salmon filets in a baking dish and pour the honey-ginger glaze over them, ensuring they are evenly coated.
  4. Arrange the sliced carrots around the salmon in the baking dish.
  5. Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes, until fragrant and lightly browned. Set aside.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and the carrots are tender.
  7. Garnish with toasted sesame seeds and serve immediately.
