Honey-Ginger Glazed Salmon with Roasted Brussel Sprouts and Pomegranate Seeds

A vibrant and flavorful dish featuring a sweet and spicy honey-ginger glaze on perfectly cooked salmon, accompanied by roasted brussel sprouts and a burst of pomegranate seeds.

Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1 pound brussel sprouts, trimmed and halved
  • 1/4 cup pomegranate seeds
  • Salt to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, honey, soy sauce, ginger, and black pepper.
  3. Place salmon fillets on the prepared baking sheet and pour the honey-ginger glaze over them, making sure to coat both sides.
  4. Arrange brussel sprouts around the salmon fillets. Drizzle with remaining glaze.
  5. Bake for 12-15 minutes, or until salmon is cooked through and brussel sprouts are tender and slightly charred.
  6. Garnish with pomegranate seeds and season with salt to taste. Serve immediately.
