Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon black pepper
- 1 pound brussel sprouts, trimmed and halved
- 1/4 cup pomegranate seeds
- Salt to taste
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, honey, soy sauce, ginger, and black pepper.
- Place salmon fillets on the prepared baking sheet and pour the honey-ginger glaze over them, making sure to coat both sides.
- Arrange brussel sprouts around the salmon fillets. Drizzle with remaining glaze.
- Bake for 12-15 minutes, or until salmon is cooked through and brussel sprouts are tender and slightly charred.
- Garnish with pomegranate seeds and season with salt to taste. Serve immediately.
