Ingredients:
- 1 lb salmon filet, skin on or off
- 2 medium zucchinis, spiralized
- 2 tbsp olive oil
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, honey, garlic, lemon juice, salt, pepper, and red pepper flakes (if using).
- Place the salmon filet in a baking dish and pour half of the honey-garlic glaze over it.
- Arrange the zucchini noodles on a separate baking sheet and drizzle with the remaining glaze.
- Roast both the salmon and zucchini noodles for 12-15 minutes, or until the salmon is cooked through and the zucchini noodles are tender.
- Serve immediately.
