Honey-Garlic Glazed Salmon with Roasted Brussel Sprouts and Caramelized Apples

A sweet and savory dish featuring perfectly glazed salmon, crispy Brussel sprouts, and caramelized apples.

Ingredients:

  • 4 (6 oz) salmon fillets, skin on
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound Brussel sprouts, trimmed and halved
  • 1 large apple, cored and thinly sliced
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a small bowl, whisk together honey, Dijon mustard, and minced garlic to create the glaze.
  4. Arrange Brussel sprouts around the salmon fillets. Toss with 1 tablespoon of olive oil and a pinch of salt and pepper.
  5. Place apple slices in a separate bowl and toss with 1 tablespoon of olive oil, 1/4 teaspoon cinnamon, and a pinch of salt.
  6. Spread the honey-garlic glaze evenly over the salmon fillets. Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from oven and transfer the salmon to serving plates.
  8. Continue roasting the Brussel sprouts and apples for another 10-12 minutes, or until they are tender and slightly caramelized.
  9. Serve the glazed salmon with roasted Brussel sprouts and caramelized apples.
