Ingredients:
- 4 (6 oz) salmon fillets, skin on
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound Brussel sprouts, trimmed and halved
- 1 large apple, cored and thinly sliced
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
- In a small bowl, whisk together honey, Dijon mustard, and minced garlic to create the glaze.
- Arrange Brussel sprouts around the salmon fillets. Toss with 1 tablespoon of olive oil and a pinch of salt and pepper.
- Place apple slices in a separate bowl and toss with 1 tablespoon of olive oil, 1/4 teaspoon cinnamon, and a pinch of salt.
- Spread the honey-garlic glaze evenly over the salmon fillets. Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from oven and transfer the salmon to serving plates.
- Continue roasting the Brussel sprouts and apples for another 10-12 minutes, or until they are tender and slightly caramelized.
- Serve the glazed salmon with roasted Brussel sprouts and caramelized apples.
