Ingredients:
- 1.5 lbs Salmon fillet
- 1 tbsp olive oil
- 1 lb Brussel sprouts, trimmed and halved
- 1 large apple (Honeycrisp or Fuji), diced
- 2 cloves garlic, minced
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Brussel sprouts and apples with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- In a small bowl, whisk together honey, soy sauce, lemon juice, and minced garlic.
- Place salmon fillet on a separate baking sheet lined with parchment paper. Pour half of the honey-garlic glaze over the salmon.
- Bake salmon and vegetables for 15-20 minutes, or until salmon is cooked through and vegetables are tender.
- Baste salmon with remaining glaze during the last 5 minutes of cooking.
- Serve immediately, garnished with fresh parsley if desired.
