Honey-Garlic Glazed Salmon with Roasted Brussel Sprouts and Apples

A sweet and savory dish that combines the richness of salmon with the crispness of brussel sprouts and the sweetness of apples.

Ingredients:

  • 1.5 lbs Salmon fillet
  • 1 tbsp olive oil
  • 1 lb Brussel sprouts, trimmed and halved
  • 1 large apple (Honeycrisp or Fuji), diced
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussel sprouts and apples with olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. In a small bowl, whisk together honey, soy sauce, lemon juice, and minced garlic.
  4. Place salmon fillet on a separate baking sheet lined with parchment paper. Pour half of the honey-garlic glaze over the salmon.
  5. Bake salmon and vegetables for 15-20 minutes, or until salmon is cooked through and vegetables are tender.
  6. Baste salmon with remaining glaze during the last 5 minutes of cooking.
  7. Serve immediately, garnished with fresh parsley if desired.
