Grilled Salmon with Lemon-Ginger Glaze and Roasted Asparagus

A refreshing summer recipe featuring grilled salmon, a zesty lemon-ginger glaze, and tender roasted asparagus.

Grilled Salmon with Lemon-Ginger Glaze and Roasted Asparagus

Ingredients:

  • Salmon fillets (4, 6 oz each)
  • Lemon juice (2 tbsp)
  • Ginger paste (1 tsp)
  • Honey (1 tbsp)
  • Soy sauce (1 tsp)
  • Black pepper (to taste)
  • Fresh parsley (chopped, for garnish)
  • Asparagus spears (12, trimmed)
  • Olive oil (2 tbsp)
  • Salt (to taste)

Instructions:

  1. Preheat grill to medium-high heat.
  2. In a small saucepan, whisk together lemon juice, ginger paste, honey, soy sauce, and black pepper. Bring to a boil over medium heat; reduce heat to low and simmer for 5 minutes or until slightly thickened.
  3. Season salmon fillets with salt. Grill for 4-5 minutes per side or until cooked through.
  4. Meanwhile, toss asparagus spears with olive oil, salt, and black pepper on a baking sheet. Roast in the oven at 425°F (220°C) for 12-15 minutes or until tender.
  5. Serve grilled salmon with roasted asparagus and drizzle with lemon-ginger glaze. Garnish with chopped parsley.
