Grilled Lemon Herb Shrimp with Roasted Vegetables

A flavorful and healthy dish featuring grilled shrimp, roasted vegetables, and a tangy lemon herb sauce.

Grilled Lemon Herb Shrimp with Roasted Vegetables

Servings:

4-6 people

Ingredients:

  • 12 large shrimp, peeled and deveined
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 medium zucchinis, sliced
  • 1 large red bell pepper, seeded and sliced
  • 1 large yellow onion, sliced

Instructions:

Roasted Vegetables:

Preheat the oven to 425°F (220°C). In a bowl, toss together zucchini, red bell pepper, and yellow onion. Drizzle with olive oil, sprinkle with salt and black pepper. Spread on a baking sheet in a single layer. Roast for 20-25 minutes or until tender.

Grilled Shrimp:

Preheat the grill to medium-high heat. In a bowl, mix together lemon juice, garlic, parsley, oregano, salt, and black pepper. Add the shrimp and marinate for at least 15 minutes, flipping occasionally. Grill the shrimp for 2-3 minutes per side or until cooked through.

Assembly:

Slice the grilled shrimp and serve with roasted vegetables and a drizzle of lemon juice. Garnish with additional parsley if desired.

Notes:

  • This recipe is perfect for a summer evening or a quick weeknight dinner.
  • You can also add other vegetables like cherry tomatoes, mushrooms, or asparagus to the roasting pan.
