Grilled Lemon Herb Shrimp with Roasted Vegetables

Ingredients:
- 12 large shrimp, peeled and deveined
- 2 lemons, juiced
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 2 medium zucchinis, sliced
- 1 large red bell pepper, seeded and sliced
- 1 large yellow onion, sliced
Instructions:
Roasted Vegetables:
Preheat the oven to 425°F (220°C). In a bowl, toss together zucchini, red bell pepper, and yellow onion. Drizzle with olive oil, sprinkle with salt and black pepper. Spread on a baking sheet in a single layer. Roast for 20-25 minutes or until tender.
Grilled Shrimp:
Preheat the grill to medium-high heat. In a bowl, mix together lemon juice, garlic, parsley, oregano, salt, and black pepper. Add the shrimp and marinate for at least 15 minutes, flipping occasionally. Grill the shrimp for 2-3 minutes per side or until cooked through.
Assembly:
Slice the grilled shrimp and serve with roasted vegetables and a drizzle of lemon juice. Garnish with additional parsley if desired.
Notes:
- This recipe is perfect for a summer evening or a quick weeknight dinner.
- You can also add other vegetables like cherry tomatoes, mushrooms, or asparagus to the roasting pan.
