Ingredients:
- 1 lb salmon fillet, skin on or off
- 2 large sweet potatoes, peeled and cubed
- 1 head of broccoli, cut into florets
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tsp grated fresh ginger
- ½ tsp black pepper
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together soy sauce, olive oil, honey, ginger, and black pepper.
- Place the salmon fillet on the prepared baking sheet. Pour half of the glaze over the salmon.
- Toss the sweet potatoes and broccoli florets with the remaining glaze. Spread them evenly around the salmon on the baking sheet.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
