Ginger-Soy Glazed Salmon with Roasted Sweet Potatoes and Broccoli

This easy weeknight dinner features salmon glazed with a savory ginger-soy sauce, roasted sweet potatoes for sweetness, and vibrant broccoli florets.

Ingredients:

  • 1 lb salmon fillet, skin on or off
  • 2 large sweet potatoes, peeled and cubed
  • 1 head of broccoli, cut into florets
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • ½ tsp black pepper

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together soy sauce, olive oil, honey, ginger, and black pepper.
  3. Place the salmon fillet on the prepared baking sheet. Pour half of the glaze over the salmon.
  4. Toss the sweet potatoes and broccoli florets with the remaining glaze. Spread them evenly around the salmon on the baking sheet.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
