Ingredients:
- 1 lb salmon fillet, skin on or off
- 2 large sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tbsp grated ginger
- 2 tbsp soy sauce
- 1 tbsp honey
- 1/2 tsp black pepper
- 5 oz fresh spinach
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
- In a small bowl, whisk together soy sauce, honey, ginger, and black pepper.
- Place salmon fillet in a baking dish and pour the glaze over it. Let marinate for 10 minutes.
- Bake salmon alongside the sweet potatoes for 12-15 minutes, or until cooked through.
- While the salmon and sweet potatoes are baking, heat remaining olive oil in a skillet over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
- Serve salmon with roasted sweet potatoes and wilted spinach.
