Ginger-Glazed Salmon with Roasted Sweet Potatoes and Spinach

A quick and healthy weeknight dinner featuring flavorful ginger-glazed salmon, roasted sweet potatoes, and wilted spinach.

Ingredients:

  • 1 lb salmon fillet, skin on or off
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1/2 tsp black pepper
  • 5 oz fresh spinach

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
  2. In a small bowl, whisk together soy sauce, honey, ginger, and black pepper.
  3. Place salmon fillet in a baking dish and pour the glaze over it. Let marinate for 10 minutes.
  4. Bake salmon alongside the sweet potatoes for 12-15 minutes, or until cooked through.
  5. While the salmon and sweet potatoes are baking, heat remaining olive oil in a skillet over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  6. Serve salmon with roasted sweet potatoes and wilted spinach.
