Ginger-Glazed Salmon with Roasted Sweet Potatoes and Broccoli

A flavorful and healthy dinner featuring pan-seared salmon glazed with a spicy ginger sauce, alongside roasted sweet potatoes and broccoli.

Ingredients:

  • 1.5 lbs salmon fillets
  • 2 large sweet potatoes, peeled and diced
  • 1 head of broccoli, cut into florets
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp honey
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.

  2. While the vegetables roast, whisk together soy sauce, ginger, garlic, honey, red pepper flakes (if using), and remaining olive oil in a small bowl.

  3. Heat a large skillet over medium heat. Season salmon fillets with salt and pepper. Sear for 3-4 minutes per side, or until cooked through.

  4. Brush the prepared glaze over the salmon during the last minute of cooking.

  5. Serve salmon immediately over roasted sweet potatoes and broccoli.
