Ingredients:
- 1.5 lbs salmon fillets
- 2 large sweet potatoes, peeled and diced
- 1 head of broccoli, cut into florets
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1 tsp honey
- ½ tsp red pepper flakes (optional)
- Salt and black pepper to taste
Instructions:
Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli with 1 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
While the vegetables roast, whisk together soy sauce, ginger, garlic, honey, red pepper flakes (if using), and remaining olive oil in a small bowl.
Heat a large skillet over medium heat. Season salmon fillets with salt and pepper. Sear for 3-4 minutes per side, or until cooked through.
Brush the prepared glaze over the salmon during the last minute of cooking.
Serve salmon immediately over roasted sweet potatoes and broccoli.
