For the Salmon:
- 1.5 lbs salmon fillets
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp grated fresh ginger
- 1 tsp sesame oil
- 1/2 tsp black pepper
For the Green Beans:
- 1 lb green beans, trimmed
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
For the Sesame Quinoa:
- 1 cup quinoa
- 2 cups water
- 1 tbsp sesame seeds
- 1 tbsp chopped fresh cilantro
- 1/4 tsp salt
Instructions:
Prepare the Salmon Glaze: In a small bowl, whisk together soy sauce, honey, grated ginger, sesame oil, and black pepper. Set aside.
Cook the Quinoa: Rinse quinoa under cold water until the water runs clear. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork and stir in sesame seeds and cilantro. Season with salt.
Roast the Green Beans: Preheat oven to 400°F (200°C). Toss green beans with olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender-crisp.
Glaze and Cook the Salmon: Place salmon fillets in a baking dish. Pour the prepared glaze over the salmon, ensuring it's evenly coated. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Assemble and Serve: Divide quinoa among plates. Top with roasted green beans and glazed salmon. Enjoy!
