Ginger Glazed Salmon with Roasted Green Beans and Sesame Quinoa

A healthy and flavorful dish featuring a vibrant ginger glaze for salmon, perfectly roasted green beans, and nutty sesame quinoa.

Ingredients:

  • For the Salmon:

    • 1.5 lbs salmon fillets
    • 2 tbsp soy sauce
    • 1 tbsp honey
    • 1 tbsp grated fresh ginger
    • 1 tsp sesame oil
    • 1/2 tsp black pepper
  • For the Green Beans:

    • 1 lb green beans, trimmed
    • 1 tbsp olive oil
    • 1/4 tsp salt
    • 1/4 tsp black pepper
  • For the Sesame Quinoa:

    • 1 cup quinoa
    • 2 cups water
    • 1 tbsp sesame seeds
    • 1 tbsp chopped fresh cilantro
    • 1/4 tsp salt

Instructions:

  1. Prepare the Salmon Glaze: In a small bowl, whisk together soy sauce, honey, grated ginger, sesame oil, and black pepper. Set aside.

  2. Cook the Quinoa: Rinse quinoa under cold water until the water runs clear. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed. Fluff with a fork and stir in sesame seeds and cilantro. Season with salt.

  3. Roast the Green Beans: Preheat oven to 400°F (200°C). Toss green beans with olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender-crisp.

  4. Glaze and Cook the Salmon: Place salmon fillets in a baking dish. Pour the prepared glaze over the salmon, ensuring it's evenly coated. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

  5. Assemble and Serve: Divide quinoa among plates. Top with roasted green beans and glazed salmon. Enjoy!
