Ingredients:
- 1 lb salmon fillet, skin on
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 1 clove garlic, minced
- 1 tbsp honey
- ½ tsp black pepper
- 1 head broccoli, cut into florets
- ½ cup quinoa
- 1 ¼ cups water
- Salt to taste
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together olive oil, soy sauce, ginger, garlic, honey, and black pepper.
- Place the salmon fillet on the prepared baking sheet and pour the glaze over it, ensuring both sides are coated.
- Toss broccoli florets with remaining glaze in a separate bowl. Arrange them around the salmon on the baking sheet.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Broccoli should be tender-crisp.
- While the salmon and broccoli bake, rinse quinoa under cold water until the water runs clear. Combine quinoa and water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and quinoa is fluffy. Season with salt to taste.
- Serve the glazed salmon over a bed of fluffy quinoa, topped with roasted broccoli florets.
