Ginger Glazed Salmon with Roasted Broccoli and Quinoa

A vibrant and healthy dish featuring succulent salmon glazed with a spicy ginger sauce, roasted broccoli florets, and fluffy quinoa.

Ingredients:

  • 1 lb salmon fillet, skin on
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 tbsp honey
  • ½ tsp black pepper
  • 1 head broccoli, cut into florets
  • ½ cup quinoa
  • 1 ¼ cups water
  • Salt to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, soy sauce, ginger, garlic, honey, and black pepper.
  3. Place the salmon fillet on the prepared baking sheet and pour the glaze over it, ensuring both sides are coated.
  4. Toss broccoli florets with remaining glaze in a separate bowl. Arrange them around the salmon on the baking sheet.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. Broccoli should be tender-crisp.
  6. While the salmon and broccoli bake, rinse quinoa under cold water until the water runs clear. Combine quinoa and water in a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and quinoa is fluffy. Season with salt to taste.
  7. Serve the glazed salmon over a bed of fluffy quinoa, topped with roasted broccoli florets.
