Ingredients:
- 1 lb Salmon fillets
- 1 tbsp Soy Sauce
- 1 tbsp Honey
- 1 tbsp Ginger (grated)
- 1 clove Garlic (minced)
- 1 tbsp Sesame Oil
- 5 oz Spinach
- 1/2 cup Coconut Milk
- 1/4 cup Heavy Cream
- Salt and Black Pepper to taste
Instructions:
- Whisk together soy sauce, honey, grated ginger, minced garlic, and sesame oil in a bowl.
- Place salmon fillets in a baking dish and pour the ginger glaze over them. Marinate for at least 15 minutes.
- Preheat oven to 400°F (200°C). Bake salmon for 12-15 minutes, or until cooked through.
- While salmon is baking, heat a skillet over medium heat. Add spinach and cook until wilted, about 3 minutes.
- Stir in coconut milk and heavy cream. Season with salt and black pepper. Continue cooking until sauce slightly thickens.
- Serve baked salmon drizzled with remaining glaze alongside creamy coconut spinach.
