Ginger-Glazed Salmon with Creamy Coconut Spinach

A vibrant and flavorful dish featuring succulent salmon glazed with a spicy ginger sauce, served alongside creamy coconut spinach.

Ingredients:

  • 1 lb Salmon fillets
  • 1 tbsp Soy Sauce
  • 1 tbsp Honey
  • 1 tbsp Ginger (grated)
  • 1 clove Garlic (minced)
  • 1 tbsp Sesame Oil
  • 5 oz Spinach
  • 1/2 cup Coconut Milk
  • 1/4 cup Heavy Cream
  • Salt and Black Pepper to taste

Instructions:

  1. Whisk together soy sauce, honey, grated ginger, minced garlic, and sesame oil in a bowl.
  2. Place salmon fillets in a baking dish and pour the ginger glaze over them. Marinate for at least 15 minutes.
  3. Preheat oven to 400°F (200°C). Bake salmon for 12-15 minutes, or until cooked through.
  4. While salmon is baking, heat a skillet over medium heat. Add spinach and cook until wilted, about 3 minutes.
  5. Stir in coconut milk and heavy cream. Season with salt and black pepper. Continue cooking until sauce slightly thickens.
  6. Serve baked salmon drizzled with remaining glaze alongside creamy coconut spinach.
