Ingredients
Dry ingredients:
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 cup grated Parmesan cheese (yes, you read that right - Parmesan!)
Wet ingredients:
- 1/2 cup beetroot puree
- 1/4 cup unsalted butter, melted
- 1 egg
- 1 teaspoon salt
- A pinch of black pepper
Cheesy surprise:
- 1/2 cup shredded mozzarella cheese (for an extra burst of fun!)
Instructions
- Preheat your spaceship (oven) to 375°F (190°C).
- In a large mixing bowl, whisk together the flour, cornstarch, and Parmesan cheese.
- In another bowl, whisk together the beetroot puree, melted butter, egg, salt, and black pepper.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be gentle, we don't want any space rocks!
- Add the shredded mozzarella cheese to the mix and fold gently (like you're handling a precious gemstone).
- Transfer the dough to a piping bag or a ziplock bag with a corner cut off.
- Pipe small, rounded puffs onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
