Dragon's Breath Chicken Tacos

A spicy twist on traditional tacos, featuring crispy chicken, pickled jalapeños, and a drizzle of chipotle aioli.

Dragon's Breath Chicken Tacos

Servings:

Ingredients:

Ingredient Quantity
Boneless, skinless chicken breasts 1 1/2 pounds
Pickled jalapeños, sliced 1 cup
Lime juice 2 tablespoons
Olive oil 1 tablespoon
Garlic powder 1 teaspoon
Chili powder 1 teaspoon
Cumin 1/2 teaspoon
Smoked paprika 1/4 teaspoon
Salt and pepper, to taste
Chipotle aioli (see below) for serving
Warm tortillas 8-10

Instructions

Step 1: Prepare the Chicken

  • In a large bowl, whisk together lime juice, olive oil, garlic powder, chili powder, cumin, smoked paprika, salt, and pepper.
  • Add the chicken breasts to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Step 2: Cook the Chicken

  • Preheat a large skillet over medium-high heat. Remove the chicken from the marinade and cook for 5-6 minutes per side, or until cooked through.
  • Transfer the chicken to a plate and let rest for 5 minutes before slicing into thin strips.

Step 3: Prepare the Tacos

  • Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  • Assemble the tacos by placing sliced chicken onto a tortilla, followed by a spoonful of pickled jalapeños and a dollop of chipotle aioli.

Chipotle Aioli

Ingredients:

Ingredient Quantity
Mayonnaise 1/2 cup
Lime juice 2 tablespoons
Smoked paprika 1/4 teaspoon
Salt and pepper, to taste

Instructions:

  • In a small bowl, whisk together mayonnaise, lime juice, smoked paprika, salt, and pepper.
  • Refrigerate until ready to serve.

Pickled Jalapeños

Ingredients:

Ingredient Quantity
Sliced jalapeños 1 cup
Lime juice 2 tablespoons
Water 1 cup
Salt, to taste

Instructions:

  • In a small saucepan, combine sliced jalapeños, lime juice, and water. Bring to a boil over medium heat.
  • Reduce the heat to low and simmer for 5-7 minutes or until the peppers have softened slightly.
  • Remove from heat and season with salt to taste. Let cool completely before using.

Notes:

  • For an extra kick, add diced onions or cilantro to the tacos.
  • If you can't find chipotle peppers in adobo sauce, substitute with 1-2 teaspoons of smoked paprika.
  • To make this recipe more substantial, serve with a side of Mexican street corn or roasted vegetables.
