Coconut and Lime Cheesecake Bars
Ingredients
Crust
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
Filling
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon grated lime zest
- 2 tablespoons freshly squeezed lime juice
- 1 cup shredded coconut
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
Crust
- Preheat oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper.
- In a medium bowl, whisk together flour and sugar. Add softened butter; mix until well combined. Press into prepared baking pan.
- Bake for 20-25 minutes or until lightly golden brown.
Filling
- In a large mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar and beat until combined.
- Beat in eggs one at a time, followed by lime zest and juice.
- Stir in shredded coconut and softened butter. Mix in vanilla extract.
- Pour filling over baked crust.
Baking
- Bake for 25-30 minutes or until edges are set and center is slightly jiggly.
- Let cool completely on a wire rack.
Cutting
- Cut into bars and serve.
