Coconut and Lime Cheesecake Bars

A twist on traditional cheesecake bars, these coconut and lime-infused treats are perfect for spring.

Coconut and Lime Cheesecake Bars

Ingredients

Crust

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened

Filling

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon grated lime zest
  • 2 tablespoons freshly squeezed lime juice
  • 1 cup shredded coconut
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

Crust

  1. Preheat oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, whisk together flour and sugar. Add softened butter; mix until well combined. Press into prepared baking pan.
  3. Bake for 20-25 minutes or until lightly golden brown.

Filling

  1. In a large mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar and beat until combined.
  2. Beat in eggs one at a time, followed by lime zest and juice.
  3. Stir in shredded coconut and softened butter. Mix in vanilla extract.
  4. Pour filling over baked crust.

Baking

  1. Bake for 25-30 minutes or until edges are set and center is slightly jiggly.
  2. Let cool completely on a wire rack.

Cutting

  1. Cut into bars and serve.
