The Coconut Mango Mousse Tiramisu Cake
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsweetened coconut milk
- 1/4 cup mango puree
- 8 ounces mascarpone cheese
- 2 tablespoons unsalted butter, softened
- 2 cups strong brewed coffee

Instructions:
For the cake:
- Preheat oven to 350°F (180°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In a large mixing bowl, combine coconut milk, mango puree, eggs, and vanilla extract. Stir in the dry ingredients until just combined.
- Divide batter evenly between prepared pans and smooth tops.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
For the mousse:
- In a large mixing bowl, combine mascarpone cheese, butter, and vanilla extract.
- Gradually add cocoa powder to the mascarpone mixture and whip until stiff peaks form.
- Fold in coconut milk and mango puree.
Assembly and serving:
- To assemble the cake, place one layer on a serving plate or cake stand.
- Spread half of the mousse over the first layer.
- Top with the second cake layer.
- Spread remaining mousse over the top and smooth out evenly.
- Refrigerate for at least 30 minutes before slicing and serving.
