Coconut Mango Mousse Tiramisu Cake

The Coconut Mango Mousse Tiramisu Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup mango puree
  • 8 ounces mascarpone cheese
  • 2 tablespoons unsalted butter, softened
  • 2 cups strong brewed coffee
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Instructions:

For the cake:

  1. Preheat oven to 350°F (180°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large mixing bowl, combine coconut milk, mango puree, eggs, and vanilla extract. Stir in the dry ingredients until just combined.
  4. Divide batter evenly between prepared pans and smooth tops.
  5. Bake for 25-30 minutes or until a toothpick inserted comes out clean.

For the mousse:

  1. In a large mixing bowl, combine mascarpone cheese, butter, and vanilla extract.
  2. Gradually add cocoa powder to the mascarpone mixture and whip until stiff peaks form.
  3. Fold in coconut milk and mango puree.

Assembly and serving:

  1. To assemble the cake, place one layer on a serving plate or cake stand.
  2. Spread half of the mousse over the first layer.
  3. Top with the second cake layer.
  4. Spread remaining mousse over the top and smooth out evenly.
  5. Refrigerate for at least 30 minutes before slicing and serving.
