Ingredients
- 2 cups sweetened shredded coconut
- 1 cup unsalted butter, softened
- 3/4 cup white granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
Step 1: Prepare the Coconut Macaroon Crust
In a medium bowl, whisk together the coconut, butter, sugar, and vanilla extract until well combined.
Step 2: Make the Chocolate Chip Cookie Topping
In a separate large bowl, whisk together the flour, baking powder, and salt. Add in the softened butter and mix until a dough forms. Fold in the chocolate chips.
Step 3: Assemble the Crumble Bars
Press half of the coconut macaroon mixture into the bottom of an 8x8 inch baking dish. Top with the chocolate chip cookie topping, pressing it down gently to ensure even distribution. Cover with the remaining coconut macaroon mixture.
Step 4: Add the Crunchy Oat Topping
In a small bowl, mix together 1/2 cup rolled oats and 1 tablespoon granulated sugar. Sprinkle this mixture evenly over the top of the crumble bars.
Step 5: Chill and Serve
Refrigerate for at least 30 minutes to allow the flavors to meld together. Cut into bars and serve chilled.
