Ingredients

  • 1 cup unsweetened shredded coconut

  • 3 large egg whites
  • 1 tablespoon unsalted butter, melted
  • Mango cream filling (see below)

Instructions

Macaroon Biscuits

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together coconut, granulated sugar, confectioners' sugar, and salt.
  3. In a large bowl, whip egg whites until stiff peaks form. Add vanilla and almond extracts; mix well.
  4. Fold coconut mixture into egg mixture until well combined. Stir in melted butter.
  5. Drop by tablespoonfuls onto prepared baking sheet, about 1 inch apart.
  6. Bake for 15-20 minutes or until lightly golden brown. Allow to cool on wire rack.

Mango Cream Filling

  • 2 ripe mangos, pureed
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tablespoon unsalted butter, softened

Combine all ingredients in a blender and process until smooth. Refrigerate until chilled.

Assembly

Place a small spoonful of mango cream filling on the flat side of one macaroon biscuit. Sandwich with another macaroon biscuit to create a sandwich. Repeat with remaining biscuits and filling.
