Coconut Macaroon Sandwiches with Mango Cream Filling
Description
A tropical twist on classic macaroons, these sandwiches are filled with a creamy mango filling and perfect for warm weather.
Ingredients
- 1 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/4 cup confectioners' sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 3 large egg whites
- 1 tablespoon unsalted butter, melted

Instructions
Macaroon Biscuits
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together coconut, granulated sugar, confectioners' sugar, and salt.
- In a large bowl, whip egg whites until stiff peaks form. Add vanilla and almond extracts; mix well.
- Fold coconut mixture into egg mixture until well combined. Stir in melted butter.
- Drop by tablespoonfuls onto prepared baking sheet, about 1 inch apart.
- Bake for 15-20 minutes or until lightly golden brown. Allow to cool on wire rack.
Mango Cream Filling
- 2 ripe mangos, pureed
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 tablespoon unsalted butter, softened
Combine all ingredients in a blender and process until smooth. Refrigerate until chilled.
Assembly
Place a small spoonful of mango cream filling on the flat side of one macaroon biscuit. Sandwich with another macaroon biscuit to create a sandwich. Repeat with remaining biscuits and filling.
