Coconut Macaroon Crusted Key Lime Pie Bars

Ingredients
Crust
- 1 1/2 cups unsweetened shredded coconut
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large egg whites
- 1 teaspoon vanilla extract
Filling
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1/2 cup freshly squeezed key lime juice
- 1/4 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1 teaspoon grated key lime zest
Instructions
Preheat and Prep
Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
Make the Crust
In a medium bowl, whisk together the coconut, flour, sugar, and salt. Stir in the melted butter until well combined. Beat in the egg whites and vanilla extract until a dough forms. Press the dough evenly into the prepared baking dish.
Bake the Crust
Bake for 20-25 minutes or until lightly golden brown.
Make the Filling
In a large bowl, whisk together the egg yolks and sugar until pale yellow. Stir in the key lime juice, flour, and melted butter until well combined. Beat in the grated key lime zest.
Pour the Filling into the Crust
Pour the filling over the baked crust and smooth the top.
Bake the Bars
Bake for 25-30 minutes or until the filling is set and the edges are lightly golden brown.
Cool and Serve
Let cool completely in the pan before cutting into bars.
