Coconut Macaroon Brownie Sandwiches

Description

These decadent treats combine the richness of fudgy brownies with the sweet crunch of coconut macaroons. Perfect for those who love a good mix of textures and flavors.

Ingredients

For the Brownies:

  • 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing
  • 2 cups of sugar
  • 4 large eggs
  • 1/2 cup of unsweetened cocoa powder
  • 1 teaspoon of vanilla extract
  • 1 and 1/4 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 cup of semi-sweet chocolate chips

For the Coconut Macaroons:

  • 1 cup of sweetened shredded coconut
  • 1/2 cup of unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 and 1/4 cups of all-purpose flour
  • Pinch of salt

For the Assembly:

  • Confectioners' sugar, for dusting

Instructions

Make the Brownies

  1. Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan and line it with parchment paper.
  2. In a medium bowl, whisk together flour, salt, and cocoa powder. Set aside.
  3. In a large bowl, use an electric mixer to cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually mix in the flour mixture until just combined, being careful not to overmix.
  6. Stir in chocolate chips.
  7. Pour the batter into the prepared pan and smooth out the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs attached.

Make the Coconut Macaroons

  1. In a medium bowl, whisk together flour, salt, and shredded coconut.
  2. Add softened butter, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
  3. Use a cookie scoop or spoon to drop rounded balls of dough onto a parchment-lined baking sheet, about 1 inch apart.
  4. Bake for 18-20 minutes or until lightly golden brown on the bottom.

Assemble the Brownie Sandwiches

  1. Once the brownies are completely cooled, cut them into 9 equal-sized squares.
  2. Place a dollop of coconut macaroon dough in the center of each square, leaving a small border around the edges.
  3. Top with another brownie square to create a sandwich cookie.
  4. Dust with confectioners' sugar and serve immediately.
