Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/2 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon chopped cilantro
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh mint
- 1 jalapeño pepper, seeded and minced (optional)
- 2 tablespoons lime juice
Instructions:
- In a bowl, combine coconut milk, lime juice, cilantro, ginger, salt, and pepper. Add shrimp and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Preheat grill to medium-high heat. Thread marinated shrimp onto skewers. Grill for 2-3 minutes per side, until pink and cooked through.
- In a separate bowl, combine avocado, red onion, mint, jalapeño (if using), and lime juice. Season with salt and pepper to taste.
Serve grilled shrimp skewers immediately topped with the refreshing avocado salsa.
