Coconut Lime Mousse Brownies

Moist brownies infused with the flavors of coconut and lime, topped with a light and airy mousse.

Coconut Lime Mousse Brownies

Ingredients:

  • 1 cup (200g) dark chocolate chips
  • 1/2 cup (100g) unsalted butter, at room temperature
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (120g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (60g) shredded coconut
  • 2 tablespoons freshly squeezed lime juice

Instructions:

Brownie Layer

  1. Preheat the oven to 350°F (180°C). Grease an 8x8-inch (20x20cm) baking dish and set it aside.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
  3. In a large bowl, using an electric mixer, beat the butter until creamy, about 2 minutes.
  4. Add the sugar to the bowl and beat until light and fluffy, about 3 minutes.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  7. Allow the melted chocolate to cool slightly before folding it into the butter mixture.
  8. Fold in the flour mixture and shredded coconut.
  9. Pour the batter into the prepared baking dish and smooth the top.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached.

Mousse Layer

  1. In a small bowl, whisk together the lime juice and confectioners' sugar until well combined.
  2. In a separate medium bowl, whip the heavy cream until stiff peaks form.
  3. Fold the whipped cream into the lime mixture until well combined.
  4. Stir in the shredded coconut.

Assembly

  1. Allow the brownies to cool completely in the pan.
  2. Once cooled, spread the mousse layer over the top of the brownies.
  3. Refrigerate for at least 30 minutes before slicing and serving.

Notes:

  • The mousse layer can be made ahead of time and refrigerated until ready to use.
  • If you prefer a stronger lime flavor, you can increase the amount of lime juice to 3 tablespoons or even more to taste.
  • These brownies are best served fresh, but they can be stored in an airtight container in the refrigerator for up to 3 days.
