Coconut Lime Macaroons

Chewy coconut macaroon cookies infused with lime zest and juice.

Coconut Lime Macaroons

These tropical treats are a perfect combination of chewy coconut, zesty lime, and sweet sugar. They're easy to make and fun to eat!

Ingredients:

  • 1 1/2 cups unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon grated lime zest
  • Pinch of salt

Instructions:

  1. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together coconut and sugar.
  3. In a separate bowl, whisk together butter, egg whites, vanilla extract, lime juice, and zest.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  6. Bake for 18-20 minutes or until lightly golden brown.
  7. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips:

  • Make sure to toast the coconut flakes in a dry skillet over low heat, stirring frequently, until fragrant and lightly browned.
  • Don't overbake! Macaroons should be chewy, not crispy.
  • Add a sprinkle of flaky sea salt on top of each cookie before baking for an extra touch of flavor.
