Coconut Lime Macaroons
These tropical treats are a perfect combination of chewy coconut, zesty lime, and sweet sugar. They're easy to make and fun to eat!
Ingredients:
- 1 1/2 cups unsweetened shredded coconut
 - 1/2 cup granulated sugar
 - 1/4 cup unsalted butter, softened
 - 2 large egg whites
 - 1 teaspoon vanilla extract
 - 1 tablespoon freshly squeezed lime juice
 - 1 teaspoon grated lime zest
 - Pinch of salt
 
Instructions:
- Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper.
 - In a medium bowl, whisk together coconut and sugar.
 - In a separate bowl, whisk together butter, egg whites, vanilla extract, lime juice, and zest.
 - Add the wet ingredients to the dry ingredients and stir until combined.
 - Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
 - Bake for 18-20 minutes or until lightly golden brown.
 - Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
 
Tips:
- Make sure to toast the coconut flakes in a dry skillet over low heat, stirring frequently, until fragrant and lightly browned.
 - Don't overbake! Macaroons should be chewy, not crispy.
 - Add a sprinkle of flaky sea salt on top of each cookie before baking for an extra touch of flavor.
