Coconut Lime Macarons with Passion Fruit Filling

A refreshing twist on traditional French macarons, infused with the flavors of coconut and lime, paired with a sweet passion fruit filling.

Ingredients

For the shells:

  • 1 1/2 cups almond flour
  • 1 1/2 cups confectioners' sugar
  • 3 large egg whites
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp lime zest
  • Food coloring (white and yellow)

For the passion fruit filling:

  • 1 cup passion fruit puree
  • 1/2 cup granulated sugar
  • 1 tsp cornstarch

Instructions

To make the shells:

  1. Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, sift together almond flour and confectioners' sugar.
  3. In a large bowl, whip egg whites until soft peaks form.
  4. Add shredded coconut, lime zest, and food coloring to the egg mixture. Whip until combined.
  5. Gradually add the almond flour mixture to the egg mixture, whipping until smooth.
  6. Transfer the mixture to a piping bag fitted with a round tip.
  7. Pipe small circles onto the prepared baking sheet.
  8. Tap the baking sheet gently to remove any air bubbles.
  9. Allow the shells to sit at room temperature for 30 minutes to form a skin.
  10. Bake for 15-20 minutes or until firm to the touch.

To make the passion fruit filling:

  1. In a small saucepan, combine passion fruit puree and granulated sugar.
  2. Whisk in cornstarch.
  3. Cook over medium heat, stirring constantly, until thickened.
  4. Allow the filling to cool completely.

Assembly

  1. Pair up shells of similar size.
  2. Spoon a small amount of passion fruit filling onto one shell.
  3. Sandwich with another shell.
  4. Serve immediately and enjoy!
