Ingredients
For the shells:
- 1 1/2 cups almond flour
- 1 1/2 cups confectioners' sugar
- 3 large egg whites
- 1/2 cup unsweetened shredded coconut
- 1 tsp lime zest
- Food coloring (white and yellow)
For the passion fruit filling:
- 1 cup passion fruit puree
- 1/2 cup granulated sugar
- 1 tsp cornstarch
Instructions
To make the shells:
- Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a medium bowl, sift together almond flour and confectioners' sugar.
- In a large bowl, whip egg whites until soft peaks form.
- Add shredded coconut, lime zest, and food coloring to the egg mixture. Whip until combined.
- Gradually add the almond flour mixture to the egg mixture, whipping until smooth.
- Transfer the mixture to a piping bag fitted with a round tip.
- Pipe small circles onto the prepared baking sheet.
- Tap the baking sheet gently to remove any air bubbles.
- Allow the shells to sit at room temperature for 30 minutes to form a skin.
- Bake for 15-20 minutes or until firm to the touch.
To make the passion fruit filling:
- In a small saucepan, combine passion fruit puree and granulated sugar.
- Whisk in cornstarch.
- Cook over medium heat, stirring constantly, until thickened.
- Allow the filling to cool completely.
Assembly
- Pair up shells of similar size.
- Spoon a small amount of passion fruit filling onto one shell.
- Sandwich with another shell.
- Serve immediately and enjoy!
