Coconut Lime Crème Brûlée Bars
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large egg yolks
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for caramelizing)
- 1 cup shredded coconut
- 1 lime, zested and juiced
Instructions:
For the crust:
- Preheat oven to 350°F.
- In a medium bowl, whisk together flour, unsweetened shredded coconut, and granulated sugar.
- Add softened butter and mix until crumbly mixture forms.
For the filling:
- In a separate bowl, whisk together egg yolks and heavy cream.
- Stir in vanilla extract and shredded coconut.
- Pour mixture into prepared crust and smooth top.
To caramelize sugar:
- Sprinkle granulated sugar evenly over top of filling.
- Place under broiler for 30-60 seconds or until golden brown.
Notes:
- Chill bars at least 4 hours before serving.
- Serve with whipped cream if desired.
