Coconut Lime Crème Brûlée Bars

A twist on the classic crème brûlée, these bars combine the richness of coconut and lime.

Coconut Lime Crème Brûlée Bars

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large egg yolks
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for caramelizing)
  • 1 cup shredded coconut
  • 1 lime, zested and juiced

Instructions:

For the crust:

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together flour, unsweetened shredded coconut, and granulated sugar.
  3. Add softened butter and mix until crumbly mixture forms.

For the filling:

  1. In a separate bowl, whisk together egg yolks and heavy cream.
  2. Stir in vanilla extract and shredded coconut.
  3. Pour mixture into prepared crust and smooth top.

To caramelize sugar:

  1. Sprinkle granulated sugar evenly over top of filling.
  2. Place under broiler for 30-60 seconds or until golden brown.

Notes:

  • Chill bars at least 4 hours before serving.
  • Serve with whipped cream if desired.
