Coconut Lime Churros

Ingredients:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup shredded coconut
- Zest of 1 lime
- Confectioners' sugar for dusting
Instructions:
- Preheat oil in a deep frying pan to 375°F.
- In a medium bowl, whisk together flour, sugar, salt, and cinnamon.
- Add melted butter, egg, shredded coconut, and lime zest to the dry ingredients.
- Mix until a dough forms.
- Using a piping bag or a plastic bag with a corner cut off, pipe long strips of dough into hot oil.
- Fry for 2-3 minutes or until golden brown.
- Drain on paper towels.
- Dust with confectioners' sugar and serve warm.
