Coconut Lime Cheesecake Crumble Bars

A twist on traditional cheesecake bars, these coconut lime crumble bars combine a creamy cheese filling with a crunchy tropical topping.

Coconut Lime Cheesecake Crumble Bars

Ingredients

For the crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted

For the cheesecake filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut

For the crumble topping:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup shredded coconut
  • 1 tablespoon lime zest
  • 1 teaspoon grated ginger

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Prepare the crust: In a medium bowl, whisk together flour and sugar. Add melted butter; stir until combined.
  3. Press the mixture into a 9x13 inch baking dish.
  4. Bake the crust for 20-25 minutes or until lightly golden brown.
  5. Prepare the cheesecake filling: In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and mix until combined. Beat in eggs one at a time. Stir in vanilla extract and shredded coconut.
  6. Pour the cheesecake mixture over the baked crust.
  7. Prepare the crumble topping: In a small bowl, whisk together flour and sugar. Add melted butter; stir until combined. Mix in shredded coconut, lime zest, and ginger.
  8. Crumble the topping evenly over the cheesecake filling.
  9. Bake for 40-45 minutes or until the filling is set and the top is golden brown.
  10. Cool completely on a wire rack.

Notes

  • The coconut and lime flavors complement each other beautifully in this dessert.
  • For an added touch, sprinkle shredded coconut over the bars before baking the crumble topping.
