Coconut Lime Cheesecake Crumble Bars
Ingredients
For the crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
For the cheesecake filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
For the crumble topping:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup shredded coconut
- 1 tablespoon lime zest
- 1 teaspoon grated ginger
Instructions
- Preheat the oven to 350°F (180°C).
- Prepare the crust: In a medium bowl, whisk together flour and sugar. Add melted butter; stir until combined.
- Press the mixture into a 9x13 inch baking dish.
- Bake the crust for 20-25 minutes or until lightly golden brown.
- Prepare the cheesecake filling: In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and mix until combined. Beat in eggs one at a time. Stir in vanilla extract and shredded coconut.
- Pour the cheesecake mixture over the baked crust.
- Prepare the crumble topping: In a small bowl, whisk together flour and sugar. Add melted butter; stir until combined. Mix in shredded coconut, lime zest, and ginger.
- Crumble the topping evenly over the cheesecake filling.
- Bake for 40-45 minutes or until the filling is set and the top is golden brown.
- Cool completely on a wire rack.
