The Coconut Key Lime Crumble Cake Recipe

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsweetened shredded coconut
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 2 tablespoons key lime juice
  • 1 teaspoon grated lime zest

Crumble Topping

  • 1/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup shredded coconut
  • 1 tablespoon key lime juice

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9x13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, combine sugar, coconut, and softened butter. Beat until light and fluffy, about 2 minutes.
  4. Beat in eggs one at a time. Stir in key lime juice and lime zest.
  5. Gradually add the flour mixture to the wet ingredients; mix until just combined.
  6. Transfer the batter to the prepared baking dish.

Crumble Topping

  1. In a small bowl, combine flour, sugar, softened butter, shredded coconut, and key lime juice. Mix until crumbly.
  2. Sprinkle the crumble topping evenly over the cake batter.

Baking

  1. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
