Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/2 cup unsweetened coconut milk
- 1 tbsp red curry paste
- 1 tsp grated ginger
- 1 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 cup chopped cilantro
- 1 jalapeño pepper, seeded and minced (optional)
- 1/4 cup red onion, finely chopped
- Skewers
Instructions:
- In a bowl, whisk together coconut milk, curry paste, ginger, lime juice, olive oil, salt, and pepper.
- Add shrimp to the marinade and coat well. Let marinate for at least 30 minutes.
- Preheat grill to medium heat. Thread marinated shrimp onto skewers.
- Grill skewers for 2-3 minutes per side, or until shrimp are cooked through and pink.
- While shrimp are grilling, combine mango, red bell pepper, cilantro, jalapeño (if using), and red onion in a bowl. Toss gently.
- Serve grilled shrimp skewers hot with mango salsa on top.
