Coconut Curry Shrimp Skewers with Mango Salsa

These flavorful shrimp skewers are marinated in a fragrant coconut curry sauce and grilled to perfection. Served alongside a vibrant mango salsa, this dish is a burst of tropical flavors!

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup unsweetened coconut milk
  • 1 tbsp red curry paste
  • 1 tsp grated ginger
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1/4 cup red onion, finely chopped
  • Skewers

Instructions:

  1. In a bowl, whisk together coconut milk, curry paste, ginger, lime juice, olive oil, salt, and pepper.
  2. Add shrimp to the marinade and coat well. Let marinate for at least 30 minutes.
  3. Preheat grill to medium heat. Thread marinated shrimp onto skewers.
  4. Grill skewers for 2-3 minutes per side, or until shrimp are cooked through and pink.
  5. While shrimp are grilling, combine mango, red bell pepper, cilantro, jalapeño (if using), and red onion in a bowl. Toss gently.
  6. Serve grilled shrimp skewers hot with mango salsa on top.
