Coconut Crusted Key Lime Pie Bars

A twist on the classic key lime pie, these bars feature a coconut crust and a tangy lime filling.

Coconut Crusted Key Lime Pie Bars

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/2 cup unsalted butter, melted
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1/2 cup freshly squeezed key lime juice
  • 1 tsp grated lime zest
  • Salt to taste

Instructions:

For the Crust:

  1. Preheat oven to 350°F (180°C).
  2. In a medium bowl, whisk together flour, unsweetened shredded coconut, granulated sugar, and confectioners' sugar.
  3. Add the melted butter and stir until the mixture is evenly moistened.
  4. Press the mixture into the bottom of a 9x13 inch baking dish.
  5. Bake for 20-25 minutes or until lightly golden brown.

For the Filling:

  1. In a large bowl, whisk together egg yolks and granulated sugar until pale yellow.
  2. Stir in key lime juice and grated lime zest.
  3. Pour the filling over the baked crust.

For the Coconut Topping:

  1. In a small bowl, mix together unsweetened shredded coconut and confectioners' sugar.
  2. Sprinkle the mixture evenly over the top of the filling.

To Finish:

  1. Bake for an additional 20-25 minutes or until the filling is set and the topping is golden brown.
  2. Allow to cool completely in the pan before cutting into bars.

Notes:

  • These bars are best served at room temperature, but can be stored in an airtight container in the refrigerator for up to 3 days.
  • If you prefer a stronger coconut flavor, you can toast the unsweetened shredded coconut in a 350°F oven for 5-7 minutes or until lightly browned before using.
