Coconut Crusted Key Lime Pie Bars
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/4 cup confectioners' sugar
- 1/2 cup unsalted butter, melted
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1/2 cup freshly squeezed key lime juice
- 1 tsp grated lime zest
- Salt to taste
Instructions:
For the Crust:
- Preheat oven to 350°F (180°C).
- In a medium bowl, whisk together flour, unsweetened shredded coconut, granulated sugar, and confectioners' sugar.
- Add the melted butter and stir until the mixture is evenly moistened.
- Press the mixture into the bottom of a 9x13 inch baking dish.
- Bake for 20-25 minutes or until lightly golden brown.
For the Filling:
- In a large bowl, whisk together egg yolks and granulated sugar until pale yellow.
- Stir in key lime juice and grated lime zest.
- Pour the filling over the baked crust.
For the Coconut Topping:
- In a small bowl, mix together unsweetened shredded coconut and confectioners' sugar.
- Sprinkle the mixture evenly over the top of the filling.
To Finish:
- Bake for an additional 20-25 minutes or until the filling is set and the topping is golden brown.
- Allow to cool completely in the pan before cutting into bars.
Notes:
- These bars are best served at room temperature, but can be stored in an airtight container in the refrigerator for up to 3 days.
- If you prefer a stronger coconut flavor, you can toast the unsweetened shredded coconut in a 350°F oven for 5-7 minutes or until lightly browned before using.
