Flaky puff pastry filled with a creamy apple filling and topped with a crunchy coconut crust.

Ingredients:

  • 1 sheet of frozen puff pastry, thawed
  • 2 apples, peeled and diced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter, softened
  • 1 egg, beaten (for brushing pastry)
  • 1 cup shredded coconut

Instructions:

Make the Apple Filling

  1. In a medium bowl, whisk together sugar, cornstarch, and salt.
  2. Add diced apples to the bowl and toss until they are evenly coated with the dry mixture.

Assemble the Puffs

  1. Roll out the puff pastry on a lightly floured surface to a thickness of about 1/8 inch.
  2. Cut out circles of pastry using a cookie cutter or the rim of a glass.
  3. Spoon a small amount of apple filling onto one half of each circle, leaving a 1/2 inch border around the edges.

Fold and Brush the Pastry

  1. Fold the other half of the pastry over the filling to form a triangle or a square shape, pressing the edges together to seal the puffs.
  2. Use a fork to crimp the edges and create a decorative border.
  3. Brush the tops of the puffs with beaten egg for a golden glaze.

Top with Coconut Crust

  1. Sprinkle shredded coconut over the top of each puff, pressing it gently onto the pastry to ensure it adheres.

Bake the Puffs

  1. Place the puffs on a baking sheet lined with parchment paper.
  2. Brush the tops with melted butter and bake at 400°F (200°C) for 20-25 minutes, or until golden brown.
