Coconut Crusted Apple Cream Puffs
Description
Flaky puff pastry filled with a creamy apple filling and topped with a crunchy coconut crust.
Ingredients:
- 1 sheet of frozen puff pastry, thawed
- 2 apples, peeled and diced
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter, softened
- 1 egg, beaten (for brushing pastry)
- 1 cup shredded coconut
Instructions:
Make the Apple Filling
- In a medium bowl, whisk together sugar, cornstarch, and salt.
- Add diced apples to the bowl and toss until they are evenly coated with the dry mixture.
Assemble the Puffs
- Roll out the puff pastry on a lightly floured surface to a thickness of about 1/8 inch.
- Cut out circles of pastry using a cookie cutter or the rim of a glass.
- Spoon a small amount of apple filling onto one half of each circle, leaving a 1/2 inch border around the edges.
Fold and Brush the Pastry
- Fold the other half of the pastry over the filling to form a triangle or a square shape, pressing the edges together to seal the puffs.
- Use a fork to crimp the edges and create a decorative border.
- Brush the tops of the puffs with beaten egg for a golden glaze.
Top with Coconut Crust
- Sprinkle shredded coconut over the top of each puff, pressing it gently onto the pastry to ensure it adheres.
Bake the Puffs
- Place the puffs on a baking sheet lined with parchment paper.
- Brush the tops with melted butter and bake at 400°F (200°C) for 20-25 minutes, or until golden brown.
