Coconut Crusted Apple Baked Crumble
A delicious dessert that combines the sweetness of apples with the crunch of toasted coconut.
Ingredients:
For the crust:
- 1 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
For the filling:
- 6-8 medium-sized apples, peeled and sliced
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions:
- Preheat your oven to 375°F (190°C).
- In a medium bowl, mix together the unsweetened shredded coconut, granulated sugar, and salt.
- Add the cold unsalted butter to the bowl and use your fingers or a pastry blender to work it into the coconut mixture until it resembles coarse crumbs.
- Press half of the coconut crust mixture into the bottom of a 9x9-inch baking dish.
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, and nutmeg. Mix well to coat the apples evenly.
- Pour the apple mixture over the coconut crust in the baking dish.
- Sprinkle the remaining coconut crust mixture over the top of the apples.
- Bake for 40-45 minutes or until the topping is golden brown and the filling is tender.
- Serve warm, topped with vanilla ice cream if desired.
