The Coconut Creme Brulee Brownie Recipe
Servings: 12-15 brownies
Ingredients:
- 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
- 2 cups of sugar
- 4 large eggs
- 1 teaspoon of pure vanilla extract
- 1 and 1/4 cups of all-purpose flour
- 1/2 cup of unsweetened shredded coconut
- 1 teaspoon of salt
- 1 cup of semi-sweet chocolate chips
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan with butter and line it with parchment paper.
Step 2: Prepare the Batter
In a medium bowl, whisk together the flour, unsweetened shredded coconut, and salt. Set aside.
Step 3: Melt the Chocolate
Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
Step 4: Mix the Batter
In a large bowl, use an electric mixer to beat together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually mix in the flour mixture until just combined, being careful not to overmix.
Step 5: Add the Chocolate and Coconut
Pour in the melted chocolate and mix until well combined. Stir in the unsweetened shredded coconut.
Step 6: Pour the Batter into the Prepared Pan
Smooth out the batter with a spatula.
Step 7: Bake the Brownies
Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Step 8: Let it Cool and Prepare the Creme Brulee Topping
Let the brownies cool completely in the pan before cutting them into squares. To make the creme brulee topping, whip heavy cream with granulated sugar until stiff peaks form.
Step 9: Assemble and Serve
Place a scoop of whipped cream on top of each brownie square. Drizzle caramel sauce over the whipped cream, if desired.
Tip: For an authentic creme brulee experience, sprinkle a thin layer of granulated sugar on top of the whipped cream before serving and use a kitchen torch to caramelize it.
