Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/4 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
- 1 cup packed light brown sugar
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 and 1/4 cups heavy cream
- 1/2 cup unsweetened shredded coconut
Instructions
For the Cookie Crust:
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
- In a medium bowl, whisk together flour, coconut, sugar, baking powder, and salt until well combined.
- Add cold butter and use a pastry blender or your fingers to work it into the dry ingredients until mixture resembles coarse crumbs.
- Press the mixture evenly into the prepared baking dish.
- Bake for 20-22 minutes or until edges are lightly golden brown.
For the Coconut Creme Brûlée:
- In a medium saucepan, whisk together brown sugar and heavy cream over medium heat.
- Add vanilla extract and shredded coconut to the saucepan. Whisk constantly until mixture comes to a boil.
- Remove from heat and let cool for 10 minutes.
- Stir in egg yolks and mix well. Strain the mixture into a clean bowl.
- Pour the mixture over the baked cookie crust.
- Refrigerate for at least 2 hours or overnight.
Topping with Caramel:
- Sprinkle shredded coconut on top of the chilled creme brûlée mixture.
- Using a kitchen torch, carefully caramelize the sugar and coconut to create a golden brown topping.
