Coconut Cream Pie Bars

Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened shredded coconut
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy cream
- 1 tsp vanilla extract
- Toasted coconut flakes for garnish
Instructions:
Step 1: Prepare the Crust
In a medium bowl, whisk together flour and sugar. Add melted butter and stir until combined. Press mixture into the bottom of a 9x9 inch baking dish.
Step 2: Bake the Crust
Bake at 350°F (175°C) for 15-20 minutes or until lightly golden brown.
Step 3: Prepare the Filling
In a large bowl, whisk together sweetened condensed milk and heavy cream. Add vanilla extract and whisk until combined.
Step 4: Assemble and Bake
Pour filling over baked crust and smooth top with an offset spatula. Return to oven for an additional 10-15 minutes or until filling is set.
Step 5: Cool and Garnish
Allow bars to cool completely in pan on a wire rack. Sprinkle toasted coconut flakes on top before serving.
