Coconut Cream Panna Cotta Tarts

A creamy and sweet dessert featuring coconut cream panna cotta atop a bed of caramelized bananas, all nestled within a flaky pastry crust.

Coconut Cream Panna Cotta Tarts

Servings 12-15 people

Ingredients:

For the Pastry Crust:
  • 1 cup and 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 egg, lightly beaten
  • 1 tablespoon ice water
For the Filling:
  • 16 ounces (450g) coconut cream
  • 1 can of sweetened condensed milk (14 oz / 397g)
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon pure vanilla extract
  • Freshly grated coconut for garnish
For the Caramelized Bananas:
  • 3 ripe bananas, sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar

Instructions:

Step 1: Prepare the Pastry Crust

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine flour and salt.
  3. Add cold butter and use a pastry blender or fingers to work it into the flour until the mixture resembles coarse crumbs.
  4. Gradually pour in ice water while mixing with a fork until the dough comes together.
  5. Turn onto a floured surface; knead 2-3 times just until it holds its shape.
  6. Wrap and chill for 30 minutes.

Step 2: Roll Out Pastry

  1. On a lightly floured surface, roll out pastry to about 1/8 inch thickness.
  2. Transfer the pastry sheet into a floured 12-cup muffin tin.
  3. Use a rolling pin to press into each cup of the muffin tin.

Step 3: Bake Pastry Crust

  1. Refrigerate for at least 15 minutes before baking.
  2. Line with parchment paper, then fill with pie weights.
  3. Bake for 20-22 minutes or until golden brown.
  4. Remove from oven; remove paper and pie weights.

Step 4: Prepare the Coconut Cream Panna Cotta Filling

  1. In a bowl, whisk together coconut cream and sweetened condensed milk until smooth.
  2. Add granulated sugar, egg yolks, and vanilla extract. Mix well until combined.

Step 5: Bake the Tarts

  1. Pour the coconut mixture into the baked pastry shells.
  2. Refrigerate for at least 4 hours or overnight.

Step 6: Prepare Caramelized Bananas

  1. In a pan, melt butter over medium heat.
  2. Add sliced bananas and sprinkle with brown sugar.
  3. Cook until caramelized, about 5 minutes on each side.

Step 7: Assemble the Tarts

  1. Garnish each tart with freshly grated coconut.
  2. Serve chilled with caramelized banana slices on top.
