Coconut Chocolate Chip Cookie Sandwiches
These decadent cookie sandwiches are the perfect treat for anyone with a sweet tooth. Soft and chewy cookies filled with shredded coconut and dark chocolate chips, sandwiched between two perfectly baked cookies.
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter (softened)
- 3/4 cup white granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup shredded coconut
- 1 cup dark chocolate chips
Instructions:
Preheat and Prepare
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Make the Cookie Dough
In a medium bowl, whisk together flour, baking soda, and salt. Set aside. In a large bowl, cream the butter until light and fluffy. Add white granulated sugar and brown sugar; mix until well combined. Beat in eggs one at a time, followed by vanilla extract. Stir in coconut flakes.
Chill the Dough
Cover the dough with plastic wrap and chill for 30 minutes.
Scoop and Bake the Cookies
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Bake for 12-14 minutes or until golden brown. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Assemble the Sandwiches
Once the cookies are completely cool, pair up two cookies and sandwich a spoonful of dark chocolate chips in between. Serve immediately.
Note: You can store these cookie sandwiches in an airtight container at room temperature for up to 3 days.
