Coconut Caramel Tarts

A rich and creamy dessert featuring coconut cream, caramelized sugar, and a hint of sea salt.

Coconut Caramel Tarts

Servings: 12 tarts

Ingredients

  • 1 cup (200g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 3/4 cups (210g) all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup (120ml) heavy cream
  • 1 can (14 oz/397g) sweetened condensed milk
  • 1 cup (120g) shredded coconut
  • Confectioners' sugar, for dusting

Instructions

Step 1: Make the Pastry Dough

In a medium bowl, whisk together flour and salt. Add softened butter and use a pastry blender or your fingertips to work it into the flour until the mixture resembles coarse crumbs.

Step 2: Roll Out the Pastry

Turn the dough out onto a lightly floured surface and roll it out to a thickness of about 1/8 inch (3mm). Transfer the rolled-out dough to a baking sheet lined with parchment paper, pressing it into an even layer. Cover the dough with plastic wrap or a damp towel.

Step 3: Chill the Pastry

Chill in the refrigerator for at least 30 minutes or up to 2 hours.

Step 4: Make the Coconut Cream Filling

In a medium bowl, whisk together coconut milk and heavy cream until well combined. Add sweetened condensed milk and mix until smooth.

Step 5: Assemble the Tarts

Preheat oven to 375°F (190°C). Roll out chilled pastry dough on a lightly floured surface to a thickness of about 1/8 inch (3mm). Cut into circles using a cookie cutter or the rim of a glass. Spoon a small amount of coconut cream filling onto one half of each dough circle, leaving a 1/2-inch border around the edges.

Step 6: Fold and Seal the Tarts

Fold the other half of the dough over the filling, pressing the edges to seal the tart. Use a fork or your fingers to crimp the edges and create a decorative border. Repeat with remaining pastry and filling.

Step 7: Bake the Tarts

Bake for 25-30 minutes, or until golden brown.

Step 8: Cool and Serve

Allow the tarts to cool on a wire rack for at least 10 minutes before serving. Dust with confectioners' sugar and serve chilled.


Note: You can also add toasted coconut flakes on top of the tarts for extra texture and flavor.
